Tonights dinner was heavenly. I mean, savor every bite, sad when it’s over type of thing.
I tried a new recipe, Chicken Roman with Lemon Butter Sauce from the blog, How Sweet It Is. I just discovered this blog and am already excited to go back and find other recipes.
I decided the perfect side to this chicken dish would be homemade mashed potatoes and roasted garlic green beans. Delicious!
Here’s what you’ll need:
- 4 boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 1 Cup flour
- 3 eggs
- 3/4 Cups romano cheese
- 3/4 cup chicken stock
- 1/2 stick butter
- 1 whole lemon
- 1/2 cup white wine
- 1/2 Tbsp dried parsley
Preheat oven to 350 degrees. Add olive oil to skillet on medium heat.
Tenderize chicken and then dredge through flour, egg and cheese.
Place in skillet and brown on both sides. Once brown, turn off-heat.
Melt butter in a small sauce pan. Add lemon juice and chopped up lemons. Try to discard all seeds. add white wine and parsley. Let come to a boil. Then pour entire mix into chicken skillet. Add chicken stock to skillet.
Cover and bake for about 20 minutes at 350 degrees.
After the chicken was in the oven, I started working on the mashed potatoes and green beans.
Add some mashed potatoes and green beans. What do you have? A delicious meal for two.
Look at the cheese. MMM. Yum.
