So, I’ve been thinking about what I’m going to give up for Lent this year. I’ve been tossing a few ideas around but in the end, I’ve decided to go with desserts. I’ve gotten in a habit of enjoying a little something sweet after dinner, and I think it will be best for my health to lay off it for awhile. No more this and certainly none of that. 40 days – let’s GO!
*Disclaimer, I will give up dessert for Lent, but I’m going to let myself enjoy cake on my birthday (March 12). I’m not sure if you can fully celebrate without some sort of birthday treat.

Now, on to an awesome dish. Chicken Piccata. This meal is awesome. So fresh and the crispy chicken is out of this world. (recipe from here)
- 4 boneless skinless chicken breasts
- 1 egg
- 2/3 cup Italian seasoned breadcrumbs
- 4 tbs margarine
- 1 tbs butter
- juice of 1 lemon, lemon halves reserved
- 3/4 cup chicken broth

Bugger giving anything up for lent – it’s not even a proper religious holiday… pfff. Anyway, rant over, this looks yummy! I love chicken cooked in this way!
