Lemon Herb Chicken Salad

Summer rocks.  It rocks my socks off!

I had the most fun this weekend.  I helped celebrate my dear friend Courtney’s wedding.  We danced, laughed, and enjoyed amazing food.  One of my favorite moments: the signature cocktail, Lemon Blueberry Martini.  Yumm!

Another reason why I LOVE summer – grilled meat. Any kind of grilled meat.  Tonight we made a tasty Lemon Herb Chicken Salad.

Doesn’t this look yummy – all my favorite fixings.

Here’s what you’ll need:

  • 1/2 cup vegetable oil
  • 1/4 cup lemon juice
  • 1 tsp minced onion
  • 1 tsp salt
  • 1/4 tsp dried thyme
  • 1/8 tsp dried marjoram
  • 2 cloves garlic, minced
  • 4 skinless, boneless chicken breast halves

In a food processor, blend the oil, lemon juice, onion, salt, thyme, marjoram, and garlic until thick and smooth.

Put chicken breasts in plastic bag.  Pour the marinade over chicken breasts. Seal bag and marinate for 1 -2 hours.

Grill chicken, 5-7 minutes on each side – until cooked through.

Make up your salad the way you like it.  I love my salad to include; lettuce, carrots, cucumber, red pepper, feta, croutons and lemon juice for dressing.  Lay chicken on top and ENJOY!
