Roasted Tomato-Basil Sauce

I love Lisa over on With Style & Grace.  She is absolutely darling and is always whipping up delicious, healthy recipes.  She posted this recipe last week and I couldn’t wait to try it.

This is easy, takes few ingredients and is filled with flavor!

Here’s what you’ll need:

  • 3 pints cherry tomatoes (I only used two pints because I was cooking for two)
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, chopped or minced
  • 1 tablespoon salt
  • 3/4 cup fresh basil, chopped

Preheat your oven to 400 degrees.

Place tomatoes on a baking sheet and add the garlic.

Drizzle olive oil over tomatoes and toss to coat.

Add a pinch of salt.

Roast tomatoes for 10-15 minutes or until tomatoes have browned and softened.

Remove and place tomato mixture in a saucepan and add fresh basil. Now it’s time to MASH. I used a potato masher to mash tomatoes into a sauce.  After I felt good about the consistency, I left on the stove to heat through.

I served my sauce on top of some whole grain pasta.  With Style & Grace also recommended serving it on garlic bread or tilapia.  Whatever your little heart desires.
