Today was my mom’s birthday.
My mom is an incredible woman.
She is my mom.
Always inspiring me to be a good person, motivating me to reach the stars and loving me every step of the way. I couldn’t be more blessed.

In honor of my mom’s birthday, I wanted to share a delicious new brownie recipe I made last week: Chocolate Chunk and Toffee Chip Brownies.

These brownies are fantastic. The next time I make these I’m going to sprinkle some sea salt on top (recommended by a brilliant co-worker).
Here’s what you’ll need:
- 8 tablespoons (1 stick) unsalted softened butter
- 1 1/2 Cups semi-sweet chocolate chips
- 1 Cup all-purpose Gold Medal Flour
- 1/4 Tsp salt
- 1/2 Cup granulated sugar
- 1/2 Cup packed light brown sugar
- 2 eggs plus 1 egg yolk
- 2 Tbsp vegetable oil
- 2 Cups chocolate chunks
- 8 oz bag milk chocolate toffee chips
Preheat oven to 350 degrees and line an 8×8 inch baking dish with foil that has been sprayed with cooking spray.
Something great about this recipe. It can all be mixed in 1 bowl. Place butter into a large mixing bowl and microwave until melted and hot, about 45 seconds or so.
Time for some chocolate!
Pour in chocolate chips and stir until mostly melted. It’s ok, if it’s not perfectly smooth.
Add flour, salt and sugars. Mix a few times then add egg yolks and oil.
Mix until well combined then add chocolate chunks and toffee chips.
Transfer batter to prepared baking dish, spreading evenly.
Bake for 45-50 minutes, until cooked through.
Let brownies set. Once cooled, serve up and enjoy!
Enjoy with a nice tall glass of milk.
