Trader Joe’s Chocolate Truffle Brownies

So, I feel like I’ve been a little obsessed with brownies lately.  Maybe it’s all the running I’ve been doing – making me crave chocolate.  I found the most amazing “cheat” brownies from Trader Joe’s.  I’m sorry if you don’t have a Trader Joe’s near you – I hate it when recipes use “special” ingredients that you can’t get at the regular grocery store, but these are just too so special, I couldn’t help but share.

So these brownies.   My best pal Mal told me about them and told me I HAD to try them.  So I picked up a box and got around to finally trying them this past weekend.  The cough box is called, “Brownie Truffle Baking Mix: Made with Dutch Cocoa and Chocolate Chips“.  I should have known that these would be a hit because when I checked out at TJ’s, the cashier was telling me about how they had sold out in states like California because people were using his mix for their “special” brownies.  I’m talking about Pot brownies.

These brownies are so easy to make and take little to no ingredients.  Just a stick of butter, two eggs and the cough box mix.  They are little pieces of fudgy, chocolaty goodness.

I’m pretty sure I will forever carry a box of these in my pantry for “in case of emergency” situations.  So the good news?  You can buy this mix online at Amazon for as little as $3.75 a box.  Get to baking!

There’s Nothing Healthy About These Brownies

… except for the love they were made with…

I’m here to talk to you about brownies, but first off – how did everyone survive their hump day?  Anyone else barely struggling to keep afloat?  I left 50 unread e-mails in my inbox as I left work tonight – how does that happen?  Here is my motto for the next two weeks…

Now, back to these fantastic brownies.  I made them for my girlfriends birthday party this past weekend.  You should know in advance that there is no nutritional value in these – just delicious chocolate times 100.

2013 New Years

Cheers to a great year ahead!!

I had such a wonderful Christmas break and I’m sad that it’s back to reality tomorrow.  In order to get excited for 2013, I thought it would be fun to look back on some of my favorite recipes and moments from this past year.

I hope you had happy holidays and are pumped for the year ahead!

1. My Go-To Bruschetta Recipe.  This is one of my favorite appetizers to serve – delicious with flavor and colorful on a plate – great for entertaining.

3. Two trips to California! We love our trips out west to visit Tim’s parents and we were blessed to get there twice this year.  We always find new things to explore, including a trip to beautiful Catalina.

Spiced Pumpkin Bread

Day 4: A great kitchen.  My parents spent Saturday night with us and instead of going out to eat, I whipped up a fabulous homemade meal.  I love my kitchen and I love making delicious food for the people I care about.  It was great to have my family around the dinner table, drinking wine and telling stories. Cheers!

Day 5: Fabulous partners for my friends.  I was reminded this weekend of how thankful I am that my friends have all found wonderful partners to share their lives with.  One of my best friends called me to tell me that she got engaged to a wonderful man.  Tiffany and Dave have a great relationship.  They are both driven individuals, have the same goofy sense of humor, love to travel the world and care a lot about each other.  Tiff and Dave are a great example of how lucky all my friends are – to have found great life mates.  A cherry on top is that we all get along and have a blast on the rare occasions we get to spend time together.   I’m thankful that over the years we have expanded our circle to include new friends.  It makes the rest of our lives really exciting to think about!

Congratulations again Tiffany and Dave! I’m so excited for you both!!

In other news, I checked off another item on my Fall bucket list.  I made my first ever loaf of pumpkin bread. I found this recipe on Pinterest from Bon Appetit.

This bread is perfect for fall – a great blend of spices and even a little chocolate.

It made two loaves – which was great because Tim and I could each take a loaf to work.  It’s a bit addictive – not gonna lie – I couldn’t stop eating it!

Birthday and Brownies

Today was my mom’s birthday.
