Baked Chipotle Sweet Potato Fries


When I lived in Colorado Springs, I discovered Sweet Potato Fries – and let me just say, they are one of my favorite side items! A little sweet, a little salty – yumm.

This is a great WW friendly side. I see this being a new favorite in my house!

Baked Chipotle Sweet Potato Fries (Recipe Inspired Here)

  • 1 sweet potato (about 5” long) peeled and cut into 1/4” fries

  • 2 tsp olive oil

  • sea salt

  • ground chipotle chile

  • garlic powder

Preheat oven to 425 degrees.

Peel sweet potato and cut into 1/4” fries. Make sure they are all cut to the same size to ensure even cooking.

A trick I would recommend is to buy a fat round potato and cut the edges off so it’s more of a rectangle. Cut into 6 rectangle pieces – this makes it easier to cut into square strips.

In a large bowl, toss sweet potatoes with olive oil, salt, garlic powder and chipotle chile powder. Since the directions didn’t call for a specific amount of sea salt, ground chipotle chile or garlic powder – I just tossed a bunch in until I felt it was seasoned enough.

Spread potatoes on a baking sheet. Avoid crowding so potatoes get crisp. Bake 15 minutes. Turn and bake an additional 10-15 minutes.
