Tim and I traveled to Denver this past weekend for one of my good friends weddings. While there, we stopped at all the local favorites to enjoy meals. One of my favorites was at Sonterra Grill in Colorado Springs. The restaurant gives off a southwestern vibe and the food is fresh and flavorful.
I wanted to try and recreate a salad I had there except I didn’t fry this chicken. In this monster salad I used:
Fresh lettuce
Pico de Gallo
Mexican Corn
Grilled Chicken seasoned with Greek Seasoning
Crispy Bacon – MMMM
A sprinkle of Mexican Cheese
Lemon Juice squeezed on top
