{WARNING: this post contains lots of pictures of the most amazing little baby.}
I got to meet someone very special this weekend. Her name is Eva Rose. She is absolutely amazing.
My dear friend Jacque and her husband Jim had a beautiful, baby girl in June. It’s so exciting to see them be parents – they are amazing!
All her Aunties LOVE HER!
She even got some snuggles from Uncle Tommy.
I just can’t get enough of her.
It was an AMAZING weekend, full of quality time with some of my favorite people.
Another great thing about this weekend? I came away with a great Guacamole recipe! Jacque and Tiff got busy in the kitchen and made up a FANTASTIC little appetizer.
We gobbled this dip up. Light and perfect for a Friday night app.
Enjoy!
KKG Guacamole
1/2 red onion
2 small tomatoes
4 avocados
2-4 cloves of garlic
1 lime
1 jalapeno (optional)
salt and pepper
cumin (optional)
Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. Dice up tomatoes and onion. Add them to bowl. Chop garlic cloves and add to mix. Finally, add lime juice. Take potato smasher and smash together guacamole mix. Mix well and taste for salt and pepper.
*Cut up jalapeno and add if you like spice. We kept it out and left it optional. Tiffany, also loves adding cumin.
